I've got a number of invoices in Feedback Not Left status that are so old that feedback's no longer a possibility (>6 months). Should I change their status to Closed? I think so, but maybe there's a reason I don't see not to do it. And so I ask here...

If feedback can no longer be submitted, then manually changing the setting to closed is the best option. Then when you archive records, the closed Invoices can also be archived away keeping your database clean.
